How does one become airman certified? Many employers look for this on resumes. What is involved in becoming certified? What type of training is involved? What does an airman certificate grant?

I will make this simply in the US an airman is a person that hold an FAA license. This includes pilots, mechanics, ATC controllers, etc. Training depends on what type of license you are wanting.
