I assume that in the summer, between the dates above, they fly them somewhere else (Barbados?). I know they do scheduled to other places but it tends to be seasonal

Air France used to operate the following routes on a regular basis (among others):
CDG-DKR-GIG
CDG-DKR-CCS (not sure about the stop-over)
CDG-IAD-MEX
And, if I'm correct:
CDG-IAD-DFW in cooperation with Braniff International
DKR = Dakar, Senegal
For now, only one route still exists:
CDG-JFK operated round-trip on a daily basis.
There has been some projects to upgrade the Concorde flights to two daily frequencies, partly because of the operational issue the early departure of the Concorde brings (it departs too early from JFK to be operated by the same aircraft as the one operating the flights from CDG, and so an aircraft has to saty at JFK over-night).
