Manchester is good, Newcastle used to be quite good but its still ok.Birmingham isnt too bad and if you go to Edinburgh on a sunday you can park in the market car park which is right next to the airport.

if you are willing to be a bit flexible on the airport idea, go to an airshow. The big one which will feature a fair deal of civil aviation is Farnborough International (29th and 30th July are the public days- I think). They will have the 767-400 on display (static only I think) and hopefully the Typhoon, or whatever they call it these days. The weekend before there is the Air Tattoo at Cottesmore which will have more flying, but of an entirely military nature.
As for airports, If you dont have any real restrictions, I would recommend trips to LGW, LHR and MAN. These airports all have great spectators facilities (compared with most places) and have a large variety of interesting aircraft. There are others, but I wouldn't make a special trip to these. As for photos: with a car you are sorted, otherwise it is possible to reach locations for good shots, but harder.
