Just a question for my own personal use, I'm flying WLG-CHC-SYD-DXB on monday. I have seen that EK now offer online check in, but would I be able to check myself into an emergency exit row, or can this only be done at the terminal?

I recently flew Delta BNA-ATL-SFO. When booking my ticket online, I reserved myself exit rows for both segments. When I got to the airport, I checked in using the self-service kiosk, and was issued boarding passes with no problems. No Delta employees involved in my travel at all. So I guess it really comes down to the specific airlines and their policies.
