OK we all know that El Al isn´t allowed to fly on Saturdays due to the Jewish religious laws.
But...El Al has a cargo subsidiary called CAL (or CAI, sorry I don´t remember well).

I had the chance to see CAL´s white-painted B747F´s flying on Saturdays at London Heathrow. Does CAL has a sort of waiver in Israel that allows them to fly during the Shabbat? (BTW, these Jumbo´s carry israeli reg´s. 4X-)

Either what you are guessing is right (waiver), or, its possible that this aircraft wasn't operated by El Al, just for them.

Hi every one!
LY no fly on shabats, from friday eve. to saturday after noon, so, the 757 you saw may be flies after ending shabats.
You can see many israels aircraft on shabats, in europe and around israel (turkey, greece, chypre..) with registration 4X-, as Israir, Arkia, Aroel.... They fly all the week, including saturdays.
You can find some LY fligths also at shabats, to MAD, ZRH. GEN, LCA, BRU.... This are codeshare fligths with foreing airlines.

El Al leases their planes to Arkia to fly on Shabbat. It is possible the 757 you saw was being operated by Arkia.

To Pu803: No the Shabbat wasn't yet finished, the sun was still shining, it was at about 1600 hours (4pm). I think Activale is right the plane was leased out.
