Does anyone have any ideas what route's these 737's be flying for ANA?

I imagine they're going to be all New Style Business Class, so probably long-thin routes that can support ~40 premium seats (like LH uses PrivatAir for).

In the link Stitch has provided, you'll note that these 737-700ERs are two of the order placed in July 2003 converted to this model so their total 737NG family commitment remains at 45. But they are the launch customer for the 737-700ER.

IMO, not for ANA. As for JAL, yes as they stated an interest in the 739ER when they placed their order, some of their options are for the model, as they are focussing on smaller airplanes as they consolidate I'd say we might well see a 739ER order from JAL but not from ANA.

The 734s that flew for ANK are now gone and passed onto AirDo (Air Hokkaido Int'l).
Not a single 735 or A320 has left the ANK/NH fleet yet. An A321 (JA103A) has left the fleet last month.
