I remember one of my dad's friends telling me when I was a kid (growing up in Anchorage) that the fellow on the tail of the plane was a local ANC VP from the airline. As I recall, he said that when they did the new liveries for the four 727s they had the art all ready for totem pole, the sourdough and the onion domes but couldn't find just the right picture for the other idea, an eskimo in a fur parka.
According to this friend of my dad's (an executive with AS at the time, his name was Hal something... this was at least 30 years ago) they were going through the office trying to find a picture that they owned the rights to (as opposed to having to pay someone for their likeness or license a stock image), and found one of some company bigwigs in parkas at some remote Alaskan station. The ad agency took the photo, made it all contrasty (which turned the whitey bigwig into an eskimo in the process) and that was the picture they ended up using.
Now, this is all out of my faulty memory, told by someone who was probably rather drunk at the time, so take this story with a grain of salt.

There is the rumor that he is named for Chester Seevek who was an Inupiaq who worked for Wien Air in Kotzbue to greet tourists, this however is just a rumor.

As a kid, I used to see the tails when coming into LAX but couldn't see the titles because the planes were parked and hidden most of the time, and the script was pretty hard for a small kid to read at an angle.
It was a long time until my brain stopped making that connection and saw an eskimo.
I think it's funnier when it's Lincoln!

AS considered getting rid of the eskimo back when they were looking to revise their look. It brought howls of protest. I think Chester or whoever he is may be here to stay. I did like some of the other old AS logos, like the totem pole, onion dome church. Retro jets anyone?

I have said this before on the forum here.....The person that the Eskimo on the Alaska tails resembles the most is the Actor John Laroquette....that used to play Dan Fielding on the sitcom Night Court.....
