What does El Al operate from Newark to Tel Aviv? Is it a nonstop, year-round
service or via Stansted on a 757?

They are non-stops using 747-400s and 747-200s-all year round
From Jan Wednesday flights out of Newark will be 767-300.
This coming Wednesday the flight will be 747-300
operated by leased aircraft from Air Atlantic Icelandic.

So there is a mixed bag of aircraft

Two corrections.

1) The airline is Air Atlanta Icelandic

2) LY has suspended EWR-STN service.

The Summer markets, usually the busiest are on a 747-400. My flights were. EL AL is awesome, but their 747-200 SUCK! Get a 47-400 or a 67-300!

El Al operates a daily service to EWR, LY017/018 operated by a 744, though, equipment may vary.
El Al does NOT fly ANY 763, only 762.

The service via STN which you are talking about, ContinentalEWR, was flight #015/016, the flight was operated by a mixed use of 747 & 757, 2 weekly flights, The service was ceased 2 years ago.
BTW, El Al also flew TLV-LHR-EWR.
Anyway, those services were in order to let LY pax the possible of a stop at London before or after their trip to the US or to Israel, on the same basic the airline flew last summer TLV-FCO-JFK, so the pax have a chance of visiting both Rome & Israel.

Here are a few photos of LY 757 @ EWR:
