If your mum is paying for everything, QF is most likely.
The reason? QF offers the cheapest fare from SIN-HKG-SIN. SQ/CX fares are the most expensive on this route.
CI..well...quite expensive too actually.
But you also have a choice of Garuda (A330) and UAL (B744), which are the cheapest here.
If you have relatives living in Hong Kong, take United...early departure from SIN and late return to SIN. If staying in hotels, due to check-out time at 1200, you can choose the rest.

I would go either with SQ or CX. I've never flown CX but from what i've heard they have very good service. I have flown SQ about 4 times SIN-HKG-SIN and always found a high level of inflight service as always. Anyway I would love to fly in B773 to HKG

I'd highly recommend QANTAS, but unfortunately only 767-300s are available on that route . So, you should choose SIA. Its service is excellent and you might even get to fly on a 777. I won't give my opinion on CX, as I haven't flown on it before. Do give us a trip report.

When is your actual date coming to HK?? You're not really lucky to come by at this time of the year, the airport always uses 07 for landing due to the wind direction, so perhaps you'll be coming in by sea instead of flying across the city~~
QF, CX and SIA are certainly the best choice. I was on QF last time when I went to Singapore for a cultural exchange programme. It was fantastic~~At least I got a cockpit landing on my return trip to HKG!!
BTW, what school do you study in S'pore.....just curious!!

Id choose CX anyday then SQ then china airlines
Bet you are suprised by my answer with CI?
well maybe because most of you have not even flown them. I have and for sure i was upset i was going to fly with them but i had no choice. It turned out theta the flight, service, entertainment was excelent. The food is better than Cathay Pacifics for sure. China Airlines is more than what you expect except for the faxt that they have had neumerous crashing occasions and wasnt that a MANDARINE AIRLINES airline that crashed in hong kong? or is it part of CI?
Wekll if you were to fly to hong kong Mr.BA Fly CX.
People. They make an airline. www.cathaypacific.com

Well, just some personal advice:
Want to have cockpit visit? CX or QF would be the best choice. Garuda I'm not sure but I know they have a very nice and new A330, used to saw it in Perth airport, really nice aircraft. CI I'm not sure but for sure if you are on A300, please expect a rather old aircraft. SQ and UA, forget about it.
So, the choice would be between CX, QF and GA. QF have a old and outdated 763. GA I'm not sure they have PTV or not. CX would be the best choice. Anyway, by considering a rather short flight, for me PTV wasn't really important.
I just went to HK 7th this month with CX via Perth and have a nice 30 minutes on the A330 jumpseat. A330 cockpit is just superb.
