I've been flying CA from ARN to PEK and back two times now and everytime the plane has been packed with PAX. CA is currently using a Boeing 767-200ER on the route. How come they don't upgrade back to the 747-400 which the used in the past?

There is a HUGE difference between a 747-400 and a 767-200. But why they don't upgrade from the current 767-200? Well there are two alternatives. Either they believe a 767-200 is best suited for the route or they don't have any other aircrafts available
Yes indeed, but almost all charters to China are fully booked so I think they could use a 747 and fill it without any problem, look at TG who's operating daily 747-400 ARN-BKK, it's mostly charters there as well.
