I'm taking three flights on Lan in the next two weeks, and I'd like to know what the chances are of getting one of the new or reconfigured birds. My itinerary is as follows:

Well the chances of getting the new interior are very difficult to tell. As far as i know the new coach cabin on the 767 are only available on the newest planes on Lan's fleet. There is a lot of 767 that doesn't have the new interior but they offer PTV's on coach. And last but not least there are a little part of the fleet (the oldest one) that doesn't have the new interior neither ptv's. I have flown with them a lot of times between CCS-MIA-CCS and i have never get the chance to get the new interior but they i have flown in the other two (The one with PTV's and the oldest one). About the A319 i don't have too much info but as i know they have a standard entertainment system and a great service inside. Maybe in the flights to and from MIA there is a chance to get the new interior. Just as a complement: CCS-MIA-CCS on LAN

Your flights to LIM and UIO-MIA will most likely have the new interiors. I have not flown in the old interiors for a while now, so I think your chances of getting a new interior are way higher than the old one.
The LIM-UIO flight has an all Y configuration and seat pitch is pretty bad, but the flight is short. On the other hand, LIM-GYE gets the B767.
Their free upgrade policy is like any other major airline. No free upgrades unless they are oversold. (In the USA, I noticed that after they upgrade all their elites, they begin upgrading elderly people which is great). The average upgrade with cash, will be the difference between your Y ticket and a full fare J ticket.
I recommend a good book or magazine for your travel or read the IN Magazine and choose a window seat of course, because your 767s will be a little bored . Enjoy your flights!

From what I've read (Flyertalk/here), it seems as thought the re-configured 767s are being placed more on the JFK and LAX routes, and rarely on the MIA routes.

Today LAN has 12 reconfigured Boeing 763 which flying in all 767 routes wihout exception. Initially the first 763s with new interior was introduced into North America routes, but now flying in all routes.

I've flown on CC-CEK before (back when she was the only bird in the new colors), and it was a great flight, despite being in the middle in a non-reclining seat. CC-CCZ, I've never flown on, but it'll be nice to add a Pratt & Whitney-powered 767 to my logbook. CC-CPF, at only a a year and three-quarters of age, is one of the newer A319s, right?

Now that I have an idea of which aircraft I'll be flying on, I have another question. When I go to select my seat on the MIA-LIM and UIO-MIA flights, Lan shows me the same exact interior configurations, which probably won't be the case since CC-CEK is a three-class bird and CC-CCZ only has two.
The seat map I'm seeing has rows 12-38, with 38 only being middle seating and no seating on the left-hand side of the airplane in rows 15-16. Does this interior apply to either CC-CEK or CC-CCZ? If not, does that mean I can expect a different seat assignment upon arriving at the airport?

Can't help with the Boeing 767-300 flights but I recently flew one of their newer A319s between LIM and CUZ and I quite enjoyed the flight. The seats were leather with headrests and the legroom and recline was fantastic. Flying time was only an hour but an episode of "laughs" was shown on the LCD's and a complimentary snack of two cupcakes, bread sticks, and chocolate was served.
Hope you enjoy your flights, LAN is a great airline.
I'll be flying them again between CUZ and LIM in a couple of weeks but next March I'll be flying them down to SCL from JFK via LIM and looking very much forward to those flights.

My family takes Lan every time we fly to Peru. From the flights I've been on, they really deserve their reputation as one of Latin America's finest carriers.
Actually, we had the option of flying LIM-GYE, then GYE-UIO-MIA, but I preferred flying LIM-UIO, then UIO-MIA. That would give me my first flight on an A319 (and a taste of Lan's short-haul service) and eliminate a stop.
Now that I think about it, what's Lan's position on in-flight cockpit visits? Since the LIM-UIO flight doesn't traverse American airspace, nor does the flight continue on to the United States, would a cockpit visit be allowed? Considering that cockpit visits are usually at the discretion of the flight crew, are Lan crews known for allowing people up there during flight? On my last flights with Lan, I was able to go up to the flight deck after landing, but it would presumably be a completely different experience to do so in flight.

There were defintely more space between the seats.. The PTV were larger and had much more movie selections and other things.. The seats were also newly designed.. Just a fabulous flight.. I flew LAX-SCL non stop over 2 weeks ago with the new cabin. The PTV where amazing, however, I will disagree that there was more seat space. (As I flew an older 763 on the return flight)
On the new plane, I was fighting for arm rest space with my neighbor, and the seats itself was too firm for such a long haul flight, and it felt a bit a narrow. And I am average height and weight!
The old bird, which I thought was in need of an upgrade, (graffiti on the tray tables, worn out seats covers etc) Though over all comfort was a touch better.
Again, the PTV system is fantastic, and I have not stop talking about it to my friends. Makes a 11 hour flight go right by.

That would be my main critique, too! The new seats are just not good enough for more than 3 hours, way to thin (and thus had to be made harder), which also goes for the armrests. And there is definately not more space in between seats when compared with the older one, which for me is too little (I am also average on size and weight), especially when compared to AA, DL or LH on their long haul flights in Y.
I also agree that the PTV is very good, and the overall look of the new interior (especially lighting) does stand out nicely.
Just sit back, relax and have a glass of Merlot...enjoy your life!
If you fly on the new 3xweekly JFK-SCL or the 5xweekly LAX-SCL flights I'm pretty sure you will be guaranteed to be on one of the newer 767-300s with the new interior because those two flights along with the MAD-SCL, SCL-SYD/AKL are among the longest operated by the airline.

Nothing guarantee that the newest 763s and retrofit 763 operate in the longest routes. Flights as SCL-LAX, SCL-JFK, GYE-MAD or the new LIM-MAD are served by the older and newest 763s. Of course today are more chance that you can fly in a retrofit LAN 763, because there are 12 planes with the new interiors (LAN operates 19 763s).
