I hear that alot of pilot interview questions deal with "What would you do if your Captain showed up drunk?" or "What would you do if your captain breaks 2 or more company or Federal rules\laws"... Now what would and could the First Officer do?

NOT go on the flight.

"What would you do if your captain breaks 2 or more company or Federal rules\laws"

Advise against/question. Ask if an emergency or
other unusual circumstances are in play. I'm
assuming the rule/law was a safety issue and
not something like a uniform (clothing) variation...
