Probably Boston, New York, and Washington. If you want variety, however, avoid LaGuardia, its just a bunch of shuttle flights and Rjs. JFK has lotsa variety, but is literally a mess. Road blocks randomly placed anywhere, half of the terminals under construction, a Rail Link in the process of being built, not to mention a hell lotta traffic; its not a pretty site. The monorail at Newark is back in operation, I believe, so if you make a couple roundtrips on it you can see alot of the airport all while sitting down.

Newark, EWR, has a few open-air places near the terminals; the rest of the airport is behind chain-link fences. However, there is the nifty new monorail linking the main terminals; this little beauty has large windows offering excellent views of the tarmac. EWR boasts a large number of domestic and international flights, especially in the early evening hours.
