After reading a trip report (http://www.airliners.net/discussions/trip_reports/read.main/121991/) and seeing that CX had their 777's fitted with the new interiors, can I assume that I will get the new cabin if I fly JFK-HKG or HKG-JFK in late May or early June?

Considering that the HKG-JFK-HKG service is flown with a 77W, yes.

I love the 777, but the 747 is irreplaceable. I think that the direct route used to also be operated by 747's, am I correct? I've travelled too much on CO for the past few years. I had some memories of travelling on a 747 from HKG - JFK.
