How are they able to create that realistic animation on the series, is it avilable to ordinary people?

Macromedia Director and yes anyone can download it. It's now developed by Adobe.

Pilot training sims are (usually) programmed in Ada with actual cockpit hardware. But I'm not quite sure what's used for the show's cockpit scenes, looks like a mix of McD and Boeing.

Regardless of cockpit & external aircraft scenes, the cabin trim is from an A300 and its cut & shut by the set dressers for narrow-body cabins.

flight sims are usually programed in C or FORTRAN. ADA is mostly used by the avionics manufactures to program flight hardware

there are programs like FLIGHT-VIZ from SIM-AUTHOR (http://www.simauthor.com/Animation-Visualization/FlightViz.html) that are used to visualize flight data

These animations are hand-created. There was a behind-the-scenes episode where the creators went over how the the animations were produced.

Sorry I meant flight simulation, especillay exterior of aircraft, livery and scenery is so real.
