DEN-SJC was 3x daily, with MD-80's. I believe the route was cut in 2001/2002.
DEN-STL when first taken over from TWA was 5x daily, mostly MD-80 with I believe a 717 or two. I don't believe they used 757's on this, at once AA took over. When AA downsized STL in 2003, the route when all-ERJ on AX, shifting between 5-6x daily. The route was finally cut in 2007.
Fun fact, remember when AA ran the DC-10 on DFW-DEN, even up through the late 90's.

The schedules varied with time, so it depends when specifically you are interested in. Here is the schedule for SJC-DEN from summer 2001, which was when AA was really focussed on SJC and had just added the CDG and TPE flights -:
