DEN-SJC was 3x daily, with MD-80's. I believe the route was cut in 2001/2002.
DEN-STL when first taken over from TWA was 5x daily, mostly MD-80 with I believe a 717 or two. I don't believe they used 757's on this, at once AA took over. When AA downsized STL in 2003, the route when all-ERJ on AX, shifting between 5-6x daily. The route was finally cut in 2007.
Fun fact, remember when AA ran the DC-10 on DFW-DEN, even up through the late 90's.

The schedules varied with time, so it depends when specifically you are interested in. Here is the schedule for SJC-DEN from summer 2001, which was when AA was really focussed on SJC and had just added the CDG and TPE flights -:
From summer 2001 -:
AA2030 0830 SJC 1159 DEN M80 X67
AA2034 1245 SJC 1611 DEN M80
AA2086 1720 SJC 2044 DEN M80
AA2089 0711 DEN 0845 SJC M80 X67
AA2095 0945 DEN 1120 SJC M80
AA2097 1647 DEN 1820 SJC M80
At that time, DEN-STL was still operated under TWA flight numbers even though it was fully owned by AA at that point. Frequency was 9x daily (all M80’s).
Here is the STL-DEN schedule after TWA had been fully integrated into AA and all flights given AA numbers -:
From winter 2002 -:
AA3129 0900 STL 1025 DEN 757
AA3135 1214 STL 1339 DEN M80
AA3139 1510 STL 1631 DEN 757
AA2961 1833 STL 2004 DEN M80
AA2957 2117 STL 2238 DEN 757 X6
AA2958 0615 DEN 0920 STL 757
AA3080 0934 DEN 1238 STL M80
AA3170 1238 DEN 1541 STL 757
AA2936 1542 DEN 1847 STL M80
AA3014 1735 DEN 2036 STL 757 X6
