In addition to TYS, US is sending a number of extra A319/A320 sections to BNA and CLT, and they're also sending extra sections of Republic E170/E175s. I don't believe they're sending in any extra PSA or Mesa planes.
Also, don't be surprised to see a US B767-200ER show up later today or early tomorrow.

I believe it is all part of the new, comprehensive evacuation plans developed by the city of New Orleans after Katrina. As for the airlines donating equipment, I don't believe this is the case as CNN specifically said that the city has chartered these aircraft. They have been busing people who having no other form of transportation to the airport and have set up a temporary terminal, complete with security. CNN was interviewing a few of the people who said they had no idea where they were going, nor had they ever been on an airplane in their life. In addition to airplanes, the city has also contracted 100s of buses and special trains from Amtrak.

We've been tankering into MSY (with all -700s in/out) just in case fuel supplies became an issue. I haven't heard that fuel has run out, but I suspect that on a longer JFK-MSY flight the JBU flight couldn't carry that much tanker fuel, thus the stop in MEM so it could carry sufficient tanker fuel on the shorter MEM-MSY leg.
