707 only Saha of Iran flies them. Hewa Bora of Congo also has one but it hasn't been seen on regular services, say to JNB. Maybe only troops transport.
DC-8; no true pax birds. ATI has 16-30 seats in some of their combi's but usually only used by Air Force, rescue teams etc. together with their cargo, never seen on regular pax services
DC-10; Biman Bangladesh is the only one flying regular pax services.
World and Omni in the US have some pax DC-10s but usually flying military troops and so. Omni might be the better bet for an occasional Hawaii holiday charter. They don't have scheduled flights on them, seems pretty hard to get on as normal civilian.

All I can think of for the DC8 is ATI, which operates combi DC8s with either 32 or 15 seats in the back and freight, or horses, upfront.

Several B707 variants also active as Private jets

There are no remaining DC-8 in passenger configuration however
VP-BHM does serve as a Private Hire Jet

How does one get on board that? Do you have to be accompanying freight, or is it used for charter flights, or a scheduled operation?

And it looks better now than 35 years ago when the first photo was taken of the same aircraft with original operator. Delivered to UA almost 40 years ago, October 1969, the last of their 10 long-range DC-8-62s. Retired 1982.
