I don't think Boeing is even making any non ER 767 still, only 767ERs, so if and that's a big IF Delta ever exercises all of its options on the 763 variants, they would all be 763ERs. However, with the delays the airlines are facing with the deliveries of the brand new 787, Boeing might receive a few more orders for the 767ER in pax version. The airlines, including Delta, know very well that they could get a factory fresh 767 delivered quicker, should they need additional aircraft for expansion.
Boeing would likely make any of the 767 type anyone wanted. At first they may so no but if it comes down to Delta saying they want 300 or they will go to Airbus for more 330s then Boeing will be glad to give them more 300s.

The current models of 767 are the 767-200ER, 767-300ER, 767-300F and 767-400ER. The 767-200 and 767-300 are discontinued. (The 767-300F is a variant of the 767-300ER, not the 767-300, just as the 777F is based on the 777-200LR but is not called 777-200LRF.)
