You are lucky you are flying on the 727, they are fast dissapearing so enjoy your flight, you will also be flying on the 777 which is an awsome aircraft. You should take the 767-400 if you have never flown it because you already had the ATL-MCO flight on the 777.

I don't know if I can take it yet, because the people I'm visiting live in Fort Myers, which is 3 hours from Orlando. But hopefully I can persuade them.

That does sound good. However I think I found one that is comparible to it. In Oct., I'm taking HA DC-10-30 from SAN to HNL, B717 HNL to LIH, DC-9 LIH to HNL and DC-10-30 back.

Well, they've got 763's going into Fort Meyers from ATL, but this comes from someone who has only been on one widebody, and that was ATL-LGA on a 763, so anything's preferable to some little town that has almost nothing there! However, I can see that you'd like to fly on a 777, 764, MD11, etc..., so I'd just go into Orlando and drive the rest of the way. Or, if it isn't too expensive, you can take the 727 from ROC to ATL, the 777 from ATL to MCO, and an Embraer 120 the rest of the way from MCO to RSW (operated by Comair).
One more thing-- the MD-11's are being sold to UPS in the next 5 years or so... I'd recommend getting on one of those; they're really nice! (From the outside, anyway... sigh)

I'm fond of my upcoming "perfect flight".
LAX to BOI F28-4000 (Horizon)
BOI to SEA Dash 8 Q400 (Horizon)
SEA to LAX B737-990 (Alaska)
BTW, Another perfect flight was one I took a year or so ago on Delta. 727-200 LAX to SLC and back a few hours later on an L-1011-500.
