What Happened To The A340-200?

It didn't really catch on, eh? The A340-200. They stopped building it, right? Why? Because of the -500, which in fact is quite bigger?

They didn't stop building the 340-200 - airlines just stopped ordering it! It's just the same with the 767-200: There is nothing the -300 can't do (well maybe some 100km range, but that's it). But whenever an airline decides to order the -200 model, Boeing and Airbus would build it. For example, CO recently bought 767-200, and I'm sure if any airline orders the 340-200, Airbus would be happy.

The A340-200 is still available as "A340-8000", the name reffering to the 8000nm of range.
It´s now a plane for ultra long range routes.
The A330-200 and the A340-313X are more versatile for the route network of most airlines, but there is a chance that some airlines will order the A340-200-8000.
Some VIP customers ordered that plane also.

Afaik, the only A340-8000 (aka A340-200X) ever built is still stored at SXF:

I think you are right on that. The airlines are till today not very interested in the A340-8000.
Nevertheless its the only version the A340-200 is now available:

As you can see, that´s the a340-200-8000 (A340-213X).
