I haven't been on a UA B737-700 in a couple of months and today was looking at some UA flights in April that currently in the online reservation system come up as -700's. To my surprise the seating chart has only a two row (8 seat) first class cabin. Being curious I looked at seatguru to and found them with "verion 1" and "verion 2", but both showed the three row (12 seat) first cabin.
Anyone know if this is correct as every -700 I found on the UA site showed this two row cabin arrangement?

Are you sure that you weren't looking at the A319 seat map? For a flight 4 months out the 73G might just be a placeholder, so they could be only selling (or rather showing) 8 first class seats in case it is switched to an A319 or something.
It's a placeholder seatmap. The real seat map doesn't get loaded until closer to departure date, when UA is certain what type will fly the route, so they don't oversell F in the event to a swap to an A319 or 737-500 or whatever they might fly.
The plural of Airbus is Airbuses. Airbii is not a word, and doesn't even make sense.
