Las Vegas Flight Schedules

Can anyone tell me why the vast majority of flights in and out of LAS (with the notable exception of Southwest) operate between the hours of 2200 and 0200? Is it because the planes don't fly well in the extremely hot and sometimes turbulent weather that can often be found around McCarran Int'l?

I've never noticed that they do, and I'm there at least five times a year.
