What you're probably looking at is the "Great Circle" route. Since the earth is not flat, a flat map will not accurately depict the world. The shortest route (across the globe) appears as a curved line when drawn on a flat map. Look at a globe sometime, then measure the distance between 2 points with a string. You'll notice that although the string is a straight line, the lines of latitude are curved. On your flat map, the latitude lines are straight, but the route appears curved. Shortest distance betwreen 2 points is the great circle route.
