Because the 700 is the right size for them. Any more passengers on a plane and they would have to have more F/A's on a flight. The more personnel on a flight, the higher the costs.

Also, they don't need the -600 yet. The -500 is the same size, and Southwest will keep a plane as long as possible, so right now they are replacing -200s with -700s in addition to adding capacity.
