Aircraft Do Airlines Assign?

Can anyone tell me where and how to find out which particular aircraft will airlines assign for a certain flight. I'm particularly talking about Cathay Pacific but also for other airlines. Also, does anyone know does Cathay Pacific still let passengers into the cockpit of their flights? (not flights to US)

For flights to and from AMS, go to http://www.schiphol.nl , and navigate to the English version if you don't speak Dutch  Wink/being sarcastic . You can fill in the flightnumber and it will give you all information there is about the flight (gate, expected arrival/departure time, and registration if known).
Maybe other airports have a similar system.
