KU has some very attractive prices on the ORD-AMS run and I was thinking of heading over.
What should I expect? Their website makes them out to be a modern carrier with good service. They have PTVs in their A340s which I would fly (I believe). Although my brother-in-law's response to that was "Why, so you can watch Al Jazeera?". LOL .
But really, is their any reason why I shouldn't fly them? Or why I should pay extra to take KLM or another carrier?

Dont hesitate, take KU, i've flown them on the LHR-JFK
run on their 777's
Their services good. OK, not as good as SQ CX or Emirates, but they have friendly FA's,clean planes and are mostly on time.

I flew with them on GVA-FRA-KWI-BKK//SIN-KWI-FRA-GVA and they are pretty good. ok, dry, but the food is ok, great inflight system, nice crew and the planes are also ok. flew 340 and 772. both ok...
have a nice flight...

I don't think that they will mind if you take your own bottle with you. even in KWI during transit I asked them if there is a problem. But I wouldn't take your bottle into Kuwait it self.
The A300 I don't know but the 772 and 340 is quite ok with seating and legroom. not great but at least average I would say.

I'm a big fan of Kuwait Airways and regardless what you might or might not hear about an airline they are always worth a try.
I economy, the PTV has a few choices but not a lot. There is usually a choice between two movies, a doco and the routemap of course which also has an arrow so you know which way to pray to Allah if you're so inclined. I seem to recall a few arabic programs as well including a music channel. A340 seats have foot rests which are a pain. When they are down there's no legroom and when stowed they reduce the space in front of your shin, however the seats are quite comfortable. The FA's are mostly males from Kuwait and the girls are from a mixture of mostly western and a few Asian countries. Kuwaiti Women are not allowed to become FA's
It's fair to say that Kuwait Airways is not the greatest ever airline, but just remember how little you are paying to be there and you'll appreciate the experience.

SQ won't resume ORD-AMS by the time I want to go over so that isn't an option. I guess if things work out with my friends I'll be looking more seriously at KU.

KU are fine. The food is good, service is good (mostly British and Indian female FAs, although the male FAs are all Arab). You can purchase alcohol at Duty free shops and bring it on board but I'm not sure about drinking on board, although I've seen passengers imbibe on the transatlantic sectors. I wouldn't try opening my own liquor on the next leg to Kuwait though. The idea of rotting in a Kuwaiti cell for one lousy scotch seems rather awful.
To sum it up, they're very inexpensive and a lot better than any of the lousy American major carriers.
