Is nonstop westbound NYC-Taipei possible with pax? CI flies the eastbound TPE-NYC nonstop in the winter(stronger winds), but never the westbound... Are there no aircraft capable of doing this? (carrying normal load of passengers)

CO manages EWR-CLK nonstop.

As Jim said, EWR-HKG uses the polar route, which has almost no headwinds.
But, a polar route would be impossible for flights to/from TPE, as it must overfly Chinese airspace, and China denys overflight rights to Taiwanese carriers at the moment.

BTW, CX goes JFK-YVR-HKG, not via ANC
CX is reverting back to YYZ-ANC (tech.)-HKG flights after having done YYZ-YVR (tech.)-HKG flights because of security measures at ANC which added costs.
