I went through MEX last week twice spending about three hours each time; I watched the AM Paris flight leave, but saw no Europeans come in at all???
Any answers or was I just not there for the right time?

Most, if not all, of the European Airlines arrive at MEX between 4pm and 8pm and they depart MEX between 5:30pm and 10pm. At least LH, BA, IB, KL, AF have that schedule.

I couldn't find any viewing platforms, but once you are in the terminal you have a pretty good view to the outside operations through the windows.

The best places to watch planes arriving and departing from MEX are the national car parking lot (on the roof) and outside the subway station named "Hangares".

I personaly like the spotting out side the subway station. You can walk about 50 yards and you are just in front of the runway with nothing between you and the aiplanes except a fence.
