I heard one of our flight attendants mention that they removed the curtains from our aircraft because flight attendants would tend to hide behind them, and it was sort of a separation point between flight crew and pax...which is poor customer service...any thoughts? Were these curtains ever in our planes? If so, when did they remove them?

No, they were never installed from the factory for the very reasons you've stated. I've never checked our 700's, but take a look at the 300/500's (no more 200's there in SJC ) , and you'll see the tracks in the galley where they would go.
