Tomorrow (Today possibly if she does a overnight in ATL) , my girlfriend starts her trek back here to MCO (and me too!) Unfortunately, the last time I talked to her was last week, and I haven't heard from her since we most likely crossed paths due to a possibly defective phone......She said last week that she believes she'll be coming back in to MCO at @5PM Saturday afternoon. If I was to call the airline tomorrow, would they know her status if I gave them her name and destination, or would they not be able to divulge that info?

They would be able to find out, but they would not be allowed to tell you. Especially not on the phone. When somebody comes to the counter and asks for an information like "Is he/she on that flight?", we usually ask for a passport, and only if the surname is the same (wife/husband, parents, family...) we are allowed to tell him/her.

Or... you can have a woman call pretending to be her. Say she wants to confirm and has forgot the flight number. They will usually give it if you pretend to be that person. I do it all the time when I pick up relatives from the airport.
