There are only 2 pilots in a cockpit in a modern aircrafts such as 747-400, A330, B777 and many more. Not like 747-200 or 300 where they need to have a Flight Engineer. Does a flight engineer nowaday switch to be a FO or Captain ?

There are definately less opporunities for flight engineers now then there have been in the past, and the number is also definately decreasing. But, it is nowhere near being nonexistant. There are an enormus amount of classic 747s, DC-10s, DC-8s, 727s, etc being flown around the world. Even so in the United States, mostly just 727s as far as passenger airlines go. But, these aircraft will be with cargo airlines and airlines in less developed countries for years and years to come.
