I'm curious to know what a-netters can cook? Whether its a five star meal to just cookies please share your cooking talents.

I can cook steak, cookies, Italian food, and salmon good.

I've managed to burn hot pockets in the microwave on multiple occassions.

My new place comes with a book full of menus for takeout and an awesome range (that looks like the previous owners cooked just about as frequently as I do). It might inspire me to try again, if I fail, at least I have the menus.

My problem is that any time I stock up on stuff to try to really cook something with my work and (fewer social) commitments as they are, by the time I get to use them they've all expired.

Dates don't mean shit on canned and dry goods. I just baked a cake with a mix that had a use-by date of 2002. I actually prefer Yorkshire pudding mix that's at least five years past its expiry date.

I can cook about anything that can be classified as eatable,
but hey, it's my job-profession-career, so it would be sad if you could'nt!

Let's give the thread a twist and since it is summer time, we might kick off with some funky salads?

here is my suggestion for the day,

Mango is absolutely fantastic right now, so here it is,

Smoked duck breast with mango salad, ginger, lime and chili tossed in olive oil...

ingredients for 4 PAX;

1 packet of a sliced smoked duckfilet, 1 filet is enough
3 mangos
2 red chilis
1 small root of ginger
2 limes
20 ml of olive oil
salt
freshly grinded black pepper
4 sprigs of flat parsley

peel the mangos and slice them in a jullienne (2mm,4cm long).
peel the ginger and slice them in the same jullienne shape as the mango.
cut the chillis across in rings and quite thin, so you have many small rings,
good for presentation and maximum flavor.

toss all this in a bowl.

squize the juice out of the limes on top of the Jullienne, poor in the olive oil gently while stirring with a spoon or clean hands!
season with the salt and pepper.

make a nice plating of the duckfilet first, and do not remove the fat from the filet.
Toss the mangosalad on top of the duck,
finish of with the flat Parsley and grind some pepper on top just for the show, and...
enjoy!

a piece of cake, actually!

I'm good at breakfast foods. It's good to get some eggs, butter and cheese back in the fridge. I make something simple for my Mom when the folks visit - I call it 4-way toast (4 pieces for her, 1 buttered, 1 w/cheese, 1 with grape jelly, 1 w/peanut butter) - and, yeah, she likes it (but I'm her kid, so I guess I have to mess up pretty bad for her to not like it).

Bought some real nice scallops yesterday , and a salmon steak. Anyone have any secrests for scallops ? I usually do butter and pan firied . They are good , but was thinking some other glaze may be good.

I need to make some fish, methinks... haven't had any for ages. There's some, well, fish-flavoured stuff in the freezer that seems to belong to nobody in the flat, so I'll need to head to the shops, get something better and toss the frozen catfish lard in the bin.

Any idea for spices? Lemongrass any good with fish?

Besides the usual microwave meals and frozen dinners I can make the following (and I'm a college student for crying out loud!!!):

Spaghetti
Salsa
Jambalaya from scratch
Pulled Pork (had it this evening, and love it)
Jerk Chicken
Teriyaki made with nearly any kind of meat
Swedish meatballs
burritos
Chex party mix
....and much more that I can't think of right now

It makes my parents and myself feel relieved that I can survive on my own in college without the use of leftover pizzas, Chinese food, and ramen noodles. Though I hate ramen noodles, they're way too salty for me and I'm the son of a (former) dietitian.

try the oven my friend. i had the same problem.

I have some excellent recipes with marinated scallops as a starter!



Marinated scallops with a mousse of selery, shavings of truffle and fried leek


for 4 PAX,

4 scallops
1 small selery (the ball shaped one, whatever they call it in english)
500ml of 35% whipping cream
1 leek
1 lemon
1 truffle mushroom; if your budget allows it, you can try dried shi-take mushroom as well.
almond oil


what you need to do,
cut the raw scallops in very thin slices, put them on a plate and marinate with lemon juice, a bit of almond oil and some pepper and salt.

cook the selery, it is this selery who comes in the shape of a ball, I don't know what you call it in english, cut it in smaller pieces of course. when it is cooked, put it in the blender and shred it up until you get a really fine mass.
while blending poor some 35% fat whipping cream in until you get a fluffy mass.

season the mousse with salt and pepper and let it cool down in the fridge.

put the mousse on a plate with the help of a ring, make a carpaccio style layer with the scallops,
remove the ring.

Cut the leek in fine stripes and fry it in a frying pan or hot oil.

Shave the truffle on top of the scallops and finish off with a curl of fried leek.

It's not bad at all, I am not a spice fan myself, but this is fresh and tasty!
Use the red Jalapeno pepper, gives the best results.

I'll dig out my bread machine recipe for the crust I use. It's easy peasy. The hardest thing about getting homemade pizza right is that you have to limit the amount of sauce and cheese. Too much sauce, and everything slides off. Too much cheese, and the toppings sink into the melting cheese and don't cook until the cheese is burnt.

The other thing you'll need is a proper wooden peel to slide it onto your pizza stone in the oven. Pull all that together, and you have great homemade pizza. I just use the Ragu pizza sauce, and doctor it up a bit. Works great.

The other thing I've been making more often this summer is real Cobb Salad. Not that stuff that looks like a Chef's Salad, but a real chopped salad with Brown Derby dressing, the way it should be done.

If you make a papillotte, lemongrass is just fantastic.
A papillotte is basically a bag made of alu-foil filled with your ideas of spices.
Dille, estragon, parsley etc. all fantastic results.

When cooking fish I just bake it in a pan with some unsalted butter, lemon juice and very thick freshly grinded black pepper. And why not some classic mashed potatoes with it.

Wrap them in bacon, and put them on the grill, with the heat as low as possible. Works real good with jumbo shrimp too.

I do all the grill cooking, and my wife handles inside. We cook on the grill several nights a week, year round. Can't beat it in my book.

My wife is an EXCELLENT cook. Part Polish, and part Portuguese - unbelievable dishes.......

Well if one wants to know, I became good at steak when I observed my dad cooking it. How many of you go crazy over london broil? Its cheap, good and the price you can get it for is so good. In Florida its like 5.99 a pound.

Also, mixing marinades is good too.

Finally, a good cooked meal is better than eating out.

My latest is just to sauté some cooked and sliced potatoes in the wok on the wok burner. Potatoes I've pealed and cooked myself - none of that rubbish out of the supermarket deep freeze. Get the potatoes going then add some sliced courgette - zucchini to some - and some chunks of tomato. Add a little salt and a liberal helping of mixed (Provençal) herbs. In another wok I'll do a couple of steaks - rare. Ensure your steaks are at room temperature before preparation and don't prick them with a fork.

I am an avid cook myself.... Love to cook any new recipe I like. Food Network is my favourite channel  Smile If I had not been in IT - I probably would have gone to a culinary institute.... So far have tried my hand at (all vegetarian) Indian - of course, Italian, Mexican, Thai etc. Cooking is also my way to relax after a long day at work. My wife is a good cook to - needlessly to say we try to avoid "boring" stuff for dinner at home....  Smile
