You can't really go for a walk outside the terminal. There is nothing there ! Why don't you go for a walk inside it instead I've been to DUB too many times, and past security, you got plenty of spotting locations.

If you walk towards the long-term car park, turn right when you reach the main road (you'll see the ALSAA building on the far side) then turn right and turn right at the next traffic lights you'll find yourself on one of the back roads which runs parallel to the main runway. It would take about 35-40 mins to walk to the best viewing point where you'll find spotters, but you could always hop in a taxi and walk back - you won't get a taxi back from there.
Seriously, the best one can hope for is that the wait at DUB is short and then get the f*ck out of the place. It's worse than most third world airports I've been through.
And I really do hope you aren't in transit and headed to the USA. Because DUB + DUB security + US pre-clearance = yearning for hara kiri.
