Safety cards, MY boarding passes, baggage claim tags from our suitcase, identification tags, model planes, 1/18 scale model cars(lambos & Ferraris), limited time coins, stuffed animals, wristbands from places I go.
That's all I can think of right now.

I collect 8tracks tapes as well as LPs and reel to reel tapes.
I am also building a modest collection of 1:500 scale Herpa wings aircraft.
The 8track tapes are the wackiest of my collection.
I have over 2000 8track tapes now. The ones I like the most are the quadraphonic 8tracks and the 1980s issed Columbia House Record Club and RCA record club tapes.
Many people are suprised to see 8track issues of albums from the 1980s such as Wham, Miami Vice Soundtrack, Madonna, Duran Duran, Missing Persons, B52s, Sting, Prince and Michael Jackson's Thriller.
Don't ask me why but I also have a huge Ray Conniff 8track collection.
The wife has several hundred special edition and vintage bottles from around the world. Most still contain the original contents.
Personally, I have ~165 1:400 and 1:200 scale airliners. I don't collect guns, but I seem to accumulate them. Have a couple dozen commemorative US Mint coin sets. Wish I flew more, or I'd have safety cards ganked from my flights.

Airline manuals. Pilot handbooks for BAC1-11, BAe-146, F-28, DC-8,9,10, L-1011, B-707,727,737,747, 757, 767, ops manuals, flight attendant manuals, fuel service manuals, weight & balance programs, training guides, MEL/CDLs: from dozens of airlines, mostly extinct including PanAm, TWA and Braniff, as well as AFMs from the factory. Probably two thousand pounds of them.
Tumbleweeds. Mostly Russian thistle but some exotics too. Of course this collection is not static - they come and go all the time. Sometimes they pass thorugh in the middle of the night and I don't even get to catalog them.
Rum. I have what I deem to be a lifetime supply at the rate I drink. At least one bottle from every island in the Caribbean.
Happiness is not seeing another trite Ste. Maarten photo all week long.
