Oh yeah - I don't know about 100 year old, but 'normal' size Rock Fish (we called 'em Orange Snapper) are damn good. We'd catch them when we were halibut fishing, and I actually prefer them over halibut.
They're not much of a fight to land, just a dead weight from very deep. As they get closer to the surface, their eyes have a habit of popping out of their sockets though - change in pressure doesn't do them any favors in the beauty department!
