What To Do In Capetown Early December?

I found a good deal on TK for flights to CPT routed HAJ-IST-JNB-CPT and with acceptable transfer times in IST.
This would bring my mum and me to Capetown, ZA from 09-DEC thru 16-DEC.
Longhaul flights are on a A330.

As I have never been to South Africa yet, I have a few questions:

Q #1: What's to do in and around Capetown during one week of stay ?
Arrrival and departure are on Sunday, meaning that Monday thru Saturday would be available for exploring.
Btw, "Exploring" can mean "shopping", "relaxing at the waterfront", but also "going somewhere by rental car" (Stellenbosch" comes to my mind) ...

Q #2: Is there anything wrong with choosing a hotel at / next to V&A Waterfront ?

Q #3: Is there anything to be taken into account getting from the airport to the hotel v/v ? Is "Taxi" a good option or should we prefer to get a shuttle bus sent from the hotel ?

Take a tour of the wine route - take your own car (downside, one of you has to not drink) or there are bus tours - go to the wineries in Paarl, Stellenbosh and Franschoek - FABE-ulous.

Got shark-cage diving in False Bay, with great whites.

Take the cable car up Table Mountain

Go eat fish and chips in Hout Bay

Whale watching round the other side of False Bay - is it Gansbaai or Hermanus ? Somewhere round there anyway

A week is hardly enough. The winelands, the mountains, Cape Point, Hermanus, Robben Island.... and of course the aforementioned shopping.

Yes. The price, especially in the high summer season which is when you are going. Traffic getting in and out of the city is also a nightmare. If you will have a car try the Blue Peter Hotel in Bloubergstrand, which is right on the beach and from where these pictures were taken.

It is an inexpensive place to stay, comfortable rooms, great buffet breakfast, fabulous pizzas at the downstairs bar and restaurant. We stay there every December when we go to Cape Town on holiday.

I too am getting the impression, that a single week would be too short.
(Time-)Problem is a) a lack of days-off left by then (I will have been away from work for *only* about 65 days = 13 weeks by end of this year) and b) birthday celebrations by family members and finally c) the approaching X-mas.
I will have to see if we can shift this trip to January, depending on the exact date my mum will undergo planned surgery (2nd knee-TEP).
