Please give me the list of the best best Filipino cuisines for Filipino food in Manila, Philippines.

I mean for Filipino lobsters, red crab, coconut beef, pork knuckle, lumpia, fish, coconut juice etc. And all the seafood items. Very nice

Try the Shangri-La hotel, Its not in Makati, but by far the best food I ate in the Phills!

Not true. If you obey basic hygienic rules (like not eating raw fruit, only drinking bottled water from a reputable source etc.) you can be quite safe anywhere. The only time I contracted diarrhea in the Philippines was when I was drinking water from the well (like the rest of my ex's family) in a village (I assume that the outhouse was about 20 meters away from the welll had somethingto do with it. But not always. In Europe e.g. your immune system can be used to some strains of bacteria, and when you go to another place, it needs a learning curve to deal with the, basically harmless, bacteria found there).
Starapple infusion administered by my ex mother in law, who used to be a village healer dealing with traditional medicines, solved the problem within hours.

Concerning Filipino cuisine, you'll have to keep in mind that the Philippinesare quite big. The different regions have different cuisines. E.g. while Tagalog food (from the region around Manila) is usually quite bland (I have heard pork Sinigang described as a pig swimming in the ocean), the people from Bicol in the center-east like spicy foods. Visayan cuisine is again different from Tagalog one  yummy  (my fiancee comes from Visayas) as is the Muslim cuisine of the South.
