FlightControl. An essential for any aviation enthusiast. Also, I like blackjack. I paid $0.99 for the pay version so I wouldn't have to put up with ads.
If I had the 3.0 firmware update, I'd also have the LiveATC app.

On the Mac I spend more time with iLife than anything not internet related. Photoshop Elements is the other major app as I use it to work on very old family pictures.
On the iPhone it's the camera, iTunes, WeatherBug and maps. (For the grandkids it's the games)

If you want a more challenging ATC experience try ATC 4.0. Also Airport Mania is so cool!

Flightplan (its a flight computer which can calculate ANYTHING for you)
FlightCode (Database with all IATA codes and such)
Xplane (great sim for the little device)
Weather Pro (Weather)
ISnake (Snake but with tilting)
Sleep Cycle (Wakes you up at the right time, or so it says)
Others include the TIME mobile app, and Facebook.
Nothing's worse then flying the same registration twice, except flying it 4 times..

I'm currently typing from my new iPod touch I got for Christmas. Great little machine. I really like the Facebook, paper Toss and battle ship apps/games... Great way to kill some time...
