Looking for a place for a brunch time meal on a Saturday (10-11am). Will be in Terminal 2 at ORD - but need to meet a friend outside of security. Would likely have enough time to go somewhere close (friend has a car).

Gibson's is very good. If you want something more generic, there's an IHOP at Mannheim Road & Touhy Avenue immediately north of the airport, probably also about 5-10 minutes away. The same area also has Chili's, Steak'n'Shake, and some various other chain restaurants.

Aside from Gibson's, there's also Harry Caray's. There's really a ton of options, but it depends upon your tastes and budget. If you want Chicago-style hot dogs and Italian beef, there's a Buona Beef just to the north of the airport. To the west is a Giordano's Pizza. Plenty of high-end steak and seafood joints. Most of it is due to the convention industry in Rosemont.
Of course, if you want to go for chain drek, you can do that, too.
