V-day Dinner Ideas

With a week till Valentine's day I made some sort of promise to my girlfriend that I'd cook her a nice meal this upcoming Sunday for V-day.

However I need ideas.


Thus far I am thinking a roast chicken, but I have no clue what else to make with it. I need something else other than roasted red potatoes and some random veg. So ideas, suggestions and recipes are welcome. Ideally this should be a healthy meal as both of us are again focusing on eating and feeling better. And a big heavy fatty meal does not lead to a romantic evening either. Unless you count falling asleep on the couch as romantic.

Filet Mignon.

Place iron skillet in oven set at 500 degrees. Let the skillet get HOT. Should take at least 15 minutes, probably 20.

Pop open bottle of Pinot Noir. Don't drink yet! Let that ish breathe.

While skillet is preheating, rub filet with herbs and a small amount of salt. Olive oil optional, again use sparingly.

When skillet is hot, place filet on skillet. Set oven to Broil. Broil for 3 minutes.

Flip.

Toss in raw asparagus. (Make sure you've snapped the root ends off!)

Broil for 3 more minutes.

Remove. Let cool.

Pour Pinot Noir.

Eat.

Drink.

Make love.

If you decide on roast chicken here are a few ideas that I use that give the meal some zest...

Potatoes - Try fingerling potatoes. Slightly sweeter flavor and leave the skin on for colorful presentation. Can do the same with purple or blue potatoes. Simply slice, coat lightly with olive oil, add crushed garlic, sea salt (to taste), black pepper (to taste) and a touch of crushed red pepper. Bake at 350 for about 10 min.

Veggies - Roasted Artichokes. If you have a George Forman type grill it works perfectly. Prepare artichokes and coat with pumpkin seed or walnut oil and roast on the grill. I've also uses grapeseed oil and it gives it a delicate flavor. Can also use asparagus, red and yellow peppers or any vegetable of your choosing.

Also try a luxurious grilled chicken fettuchini alfredo or even make it a primavera with some fresh veggies.

As for wine, drink what you like but as D L X says let it breathe for a while if it is a red and if it is a sweeter white (gewurtstrameiner, remis sweet reislings) slightly chilled works best.

And if you girl likes chocolate there are pleantly of dark chocolates on the market. High in antioxidents and still yummy.

I do like filet and the prep is pretty simple. Just a little concerned that getting good filet might be a little pricey. That and the entire apartment might smell like steak (which isn't a bad thing).

Wine is a no-go as she doesn't like the stuff..... could do some sort of cocktail/mixed drink -- ideally with what we already have. Gin, peach flavored vodka or tequila.

Fingerling potatoes sound like a good idea... she did mention something about wanting "fancy potatoes." These sound like a solid step up from just roasting some reds along with the bird.


Dark chocolate is another thing she isn't too found of. I like the dark stuff myself and even some of the high % dark stuff. But that brings up a good point, need something for desert.

Does she like milk chocolate? If she does Tiramasu is quite popular for V-day. A tad bit labor intensive to make but some supermarkets make a pretty good one.

For a more healthy dessert fress strawberries and blueberries with cinnamon infused whipped cream.

Take fresh strawberries, halved and whole blueberries and put them in a serving dish of your choice. To make whipped cream buy heavy cream or heavy whipping cream and put into mixer. ad 1/4 tsp ground cinnamon and whip up. Put a dollop ontop of fresh fruit. For a low fat option use whipped cream in a can (rediwhip) and sprinkle cinnamon on top.

Well, it seems like you're set on cooking, but as this is the first time I actually have a date around Valentines Day, we're going to a nice Italian restaurant, and then if all goes well...well let's just say there are plenty of hotels in the area   (as we both live with parents/family)

Smart of you to offer cooking on Valentine's Day. Going out will be a total rip off as restaurants take advantage of suckers that go along with this particular day.

Your chicken idea should be good. Try this...

Rub whole chicken with a little olive oil, remembering to massage extra oil on the breasts, massaging them firmly but not too rough to make them more tender for your enjoyment...but don't get too carried away, there will hopefully be a night of breast fondling and other goodies for you later provided you don't f#%k up the dinner! Next rub some minced garlic and sea salt on the chicken followed by a good amount of premium quality Dijon mustard. Next, coat the chicken in a thin layer of plain white flour, this will hold the mustard onto the chicken and stop it from melting off the skin. Also, the flour will add to the crispness of the skin. Next season with black pepper.

Now the stuffing. Mix a cup of breadcrumbs with 2 or so tsp of garlic, basil, sage and maybe some thyme, one egg, A finely chopped pear or apple or apricot and a splash of orange juice with salt and pepper. If you think you need more, add some more breadcrumbs with some more of the other ingredients. Now you can stuff it in the chicken cavity. Then, using some cotton string, tie up the legs so the stuffing is tightly secure inside.

The veggies. Cut pumpkin, red potatoes into prices (keep skin on both pumpkin and potatoes) large thick carrot slices, 2 apples or pears cored and cut in half ( really adds to sweeten the veges and sides) with 2 whole garlic bulbs. Drizzle with olive oil and basil with sea salt and black pepper.

Roasting. Before you place in oven, open your bottle of Pinot Noir or Merlot to breath as suggested above. Place chicken on centre of lighly oiled roasting tray and put veges around the side. Roast at recommended time from the chicken packet instructions or until cooked through.

Just before the chicken is ready, lightly peel the stems of some asparagus (peeling off the first layer will takeaway any stringyness) then fry in a little butter for about 5 minutes until cooked. Now, with it still in the pan, sprinkle a little sugar over to caramelise it making sure the sugar does not burn. Quickly turn it off and remove from pan.

Gravy. Once the roast is done, remove the chicken and veggies from the pan. With the juices and fats left in the pan, add some boiling water and a bit of corn starch mixed with cold water to it and cook on the stove top adding a splash of pick me up sauce and seasoning. Add more cornstarch as required until thick enough for your liking. If you like you can also add some chicken stock.

Dinner was a success and I was quite proud of the outcome. Though my hands still have a slight smell of garlic from all the prep work I did yesterday afternoon.

So the dinner was the following:

Roast chicken w/ a rosemary and garlic rub.
Fingerling potatoes (good idea BTW).
Roast asparagus w/ red pepper.
Pineapple upside down cake for dessert (admittedly the cake was from a mix).

Rub your fingers/hands on your stainless steel knife--not along the cutting edge obviously, but along the wide part of the blade. For some reason the stainless steel gets rid of the smell. Not sure it works on day old stuff, but when you're cutting it, and your hands are wet, it works really well.

FWIW, Costco has good prices on really good filets for future reference. $25-35 for 4 steaks depending on how thick they are. Some are about the thickness of an unabridged dictionary.

It was surprisingly good and I am proud of my ability to follow simple directions. The mix and recipe came from Trader Joe's.

Every Valentines Day, my mom used to bake a heart shaped meat loaf for my dad and put mashed potatoes on it and write something in ketchup on top. Yeah, it tasted like it sounds, but it was their little Valentines Day thing.
