I'm looking for a bar in Helsinki to really impress. Would be great if you can also get snacks/tapas style bites there too as we probably won't want dinner but may want something. If anybody can recommend a good bar I would be eternally grateful!

It really depends on what you prefer and on your timing... My favourite of the local specialities is the pub tram Spårakoff, an historic tram that has been converted into a pub. It operates along the main tram routes in Helsinki. But no snacks available there. An Ice Bar also available, but it seems there's one in every city these day.
Ahjo is nice, it's a combined bar, lounge and night club in the hotel Klaus K. I also like the Belge Bar & Bistro in the city center, good beers and comfy sofas upstairs.

You could do the tourist thing and go to the ice bar if you want to see something different before going somewhere else. I've been to lots of pubs in Helsinki but right now I can't think of one that stands out.
After Monday and Tuesday even the calendar says WTF...
