My First Indian Date - Need Advice.

Just bought a handful of raw, red-colored dates at the local market for the first time. I bit into them but they were quite astringent. I let them ripen at home but they started to get the wrinkled look. I wonder if any of our Middle Eastern a.netters could give me some guidance on this matter - basically, how long do you keep the fruit before they are ready to eat?

I would think the process is kind of a delicate balance of getting the fruit to ripen edibly or "ripen" ie spoiled. You may wish to expose them to a dry, cool place, like a refrigerator for at least a week or a suitably insulated cellar if you have access to one. Otherwise you may wish to look up how it is done with prunes. It may be similar.

But maybe next time, get the ready to eat variety.

Jujubs should be ready for eating right away, but some wrinkles won't spoil them.

Mind you, they're not insanely tasty when they're fresh. If you don't like them now, you probably won't change your mind when they've ripened a bit. I find them quite okay when they're preserved in sugar.

You can also chop them up and boil them in soup, or put them in congee. Which usually tastes pretty bad as well. Sorry, I realize I'm not really helping here.



Samson was a biblical tough guy, but his dad Samsonite was even more of a hard case.
