I just knocked up a really easy, satisfying and nutritious breakfast - brown rice porridge. Cooked brown rice is stewed in milk, honey, a little cinnamon and vanilla, with one egg beaten in towards the end to thicken and enrich (tempered by beating in a few spoonfuls of the hot milk before adding, to avoid scrambling).

It's one of those things that I like to cook when lazy and wanting something fairly plain, but delicious and wholesome.
So, I was wondering what sort of simple dishes or snacks you like to make, and why you like it/them particularly.

It seems a while since we had a decent cooking thread.

Yum, a food thread!

I like to make cinnamon sugar Nutella and banana sandwiches.

They're really easy to make (this recipe is for 1 serving, so adjust as necessary):

Ingredients

1/3 stick of butter
2 slices of your favorite bread
1 Jar Nutella (if used with moderation, you'll have some leftovers!  )
1 banana sliced 1/8 to 1/4 inch thick
Cinnamon-sugar mixture (I like the taste of cinnamon, so I use 1 tablespoons of sugar and 1/2 tablespoon of cinnamon)

Saute Pan

Directions

Heat saute pan on medium heat and melt half of your butter. Place one of the bread slices into the pan, and then immediately coat the side that isn't on the butter, then flip over to allow it to stick to the bread. Then, remove the cinnamon sugar bread slice, and repeat for the second slice.

After you take it out, spread Nutella generously on one slice, and layer banana slices on the other slice. After this, place the sandwich back into the pan to allow it to warm up and become nice and gooey.

Then enjoy it!

Good gracious. Not quite as nutrionally sensible as my example, but it sounds pretty delicious!

Haha, yeah, I only have them about once a week or so. But BOY do I look forward to it!

My grilled cheese I like to make when I have the time (10 mins or so):
Garlic bread, "Tuscan Style" butter (basically butter + olive oil, garlic, basil, oregano, rosemary, and thyme), cheddar cheese, crushed oregano, roast beef, and a strip of bacon. Lightly browned in a frying pan on medium heat with a vented lid to let the cheese melt.

This isn't "quick" but it requires almost no actual prep time.

Add to a slow cooker:
3 lb chicken meat (mixed light and dark meat)
1 C dried apricots, chopped or any other unsweetened dried fruit you like
1/4 C Tamari soy sauce or coconut aminos
1/4 C Dijon mustard
pepper to taste (the soy sauce has the salt)


Stir to combine and coat the chicken pieces and cook on "Low" for 8-10 hours or "High" for 4-6 hours.

Sprinkle over the top:
4 strips bacon fried crisp, crumbled

Shred and serve.

I made the fatal error of baking blueberry oatmeal muffins today. They're so quick and easy to make, and disastrously tasty! I've had three today, have to stop now. Have frozen a few and also kept a few back to take to work tomorrow, one for breakfast and a couple to share!

For a quick breakfast:

Greek yogurt
Granola
Any combination of blueberries, blackberries, kiwi, raspberries or strawberries

Quick (30 mins) lunch:

Chicken breast
Olive oil and garlic (warmed)
Breadcrumb/parmessan cheese mixture

Dip the chicken in the oil. Coat the chicken in the breadcrumb mixture. Bake for 30'ish minutes in a 425 oven. Put it between a couple of slices of bread.

Add a vegetable and you have a pretty quick dinner.

Quick lunch, dinner, whatever.

Open a pot of chickpeas, heat in their own water.

Throw away water, add olive oil, balsamic vinegar and salt. Some herbs, and spices to your personal taste.

Crush chickpeas under the fork for oil and vinegar to mix with the pea.

Instant hommos (minus the floury stuff), makes for a hearty, healthy lunch or dinner ready in literally less than 5 minutes.
