Which industry as a whole employs the most people? Is it trucking?

Trying to find something online, no dice.

Restaurants and retail would have to be among the largest, if not the largest.

McDonald's has been known to boast that it alone has 1.5 million employees worldwide.

Well, there are about 4 millions truckers alone in the United States, not including dispatchers, maintenance, truck stop employees, etc.
