For me, it is hands down "The Immigrant Song."
It may be one of the shorter Zeppelin songs, but it is simply awesome IMHO.

The girl I love...she got long, black wavy hair...
I do declare!
Seriously, it depends on what kind of mood I'm in. For example:
Party/Happy: In The Evening, Communication Breakdown
Angry: Immigrant Song, Kashmir
Wistful/Depressed: Tangerine, All My Love, Stairway To Heaven
Wacky: Hot Dog
Cathartic: Nobody's Fault But Mine
Personally, if I had a custom LZ greatest hits album, it'd have the following on it: 1.) Communication Breakdown (BBC Version), 2.) Stairway To Heaven (live, Messehalle - Hannover, 1980), 3.) Traveling Riverside Blues (BBC Version), 4.) The Train Kept A'Rollin' (live, Messehalle - Hannover, 1980), 5.) Hot Dog (In Through The Out Door), 6.) Dazed and Confused (LZ I), 7.) Ramble On (LZ II), 8.) Heartbreaker (LZ III), 9.) Immigrant Song (BBC Version), 10.) Houses of the Holy (Physical Graffiti), 11.) Hots On For Nowhere (Presence), 12.) Achilles Last Stand (Presence), 13.) In The Evening (In Through The Out Door), 14.) Trampled Under Foot (Physical Graffiti), 15.) Kashmir (Physical Graffiti), 16.) Night Flight (Physical Graffiti), 17.) Heartbreaker (LZ II).

GREAT POST
yeah, so anyway-
"Dyer Maker" without a doubt is my #1 pick. oh oh oh oh
"Kashmir" does have an amazing riff but when Puff Daddy ripped it it lost a lot of its shine.

That is absolutely true..unfortunately, but listen to the version on the live album of Robert Plant and Jimmy Page, recorded, if I remember correctly, in Marrakech with big orchestra plus several Oriental musicians...
That puts the shine back on, even stronger than before, when I saw it for the first time on MTV, I had a vision of heaven on earth, really!
