The song that reminds me most of flying is Rhapsody in Blue by Gerswhin. The reason it reminds me most of flying is because I remember it was one of the first flights I can remember (well at least clearly remember). It was on a United DC-10 from MIA-ORD and during the safety video they had the song playing in the background.

Several years ago when DL had flights to PDX from SLC for $88 round trip, I flew there 6 times in five months and I always brought a mixed tape that included Chili Peppers Aeroplane. I always think of flying when I hear that song. Also, if I hear any songs from that tape on the radio or wherever, then I think of my flights to PDX.

Strangely enough it's a Madonna song that reminds me of flying....'Crazy for you' was high in the charts at the time of my first long haul flight, and it was one of the songs that sticks in my mind from that flight-(SQ019,LHR-SIN,July 1985).Ravel's Bolero is another one....it was playing for what seemed like an eternity on the PA loop on VH-OJK as we sat on the the tarmac at Sydney for over an hour last June.
you can't buy time but you can sell your soul and the closest thing to heaven is to rock'n'roll
