If, like me, you're not a pilot and don't have access to real aircraft manuals, you could probably do worse than taking a look at the one for the 747-400 at the Precision Manuals site. It's got all sorts of tables and charts and descriptions of a lot of the buttons, levers, FMC, etc.
You might have to be patient for a couple of days as the site's very busy right now.
