I'm a little curious (being from AUS where we don't have any 757s) to know whether the cargo hold on 757s takes palletised/containerised cargo as with widebodied aircraft such as 767/A330, or whether they take "loose cargo" as with 737 and smaller aircraft??

All 757s in the U.S. are bulk loaded. But the 320 family, smaller aircraft, can take "cans"-- actually more like trays, and this is fairly common in Europe. So it wouldn't surprise me if 757s have the capability.
I can't decide whether I miss the tulip or the bowling shoe more

Yeah I don't believe the 757 can take ULD's, but as Ha763 said, they do have a moving belt system in their holds, this makes loading those heavy bags alot easier. There's a panel overhead. You just select which direction you want the holds floor to slide, then hit the button and the entire back wall as well as the rubber floor beneath you slides back.
