Does anyone know where I can find charts and diagrams of the fuel tanks inside the wing structure of Boeing airplanes? I want information on how the fuel lines and fuel pumps connect from the fuel tank to the engine? Thanks!

Find the System Schematic Manual (SSM) for the airplane of interest...the chart you want should be the first or second one in chapter 28 (usually 28-00-00).

If you can't get that, or your aircraft doesn't have an SSM (not all do), go to the AMM...should be in the same place.

Smartcockpit.com should also have a lot of this stuff, although not in the glorious colour detail that JETPILOT provided. E.g. page 5 of this file: http://www.smartcockpit.com/pdf/plane/boeing/B737/systems/0019/
